Caramelized Upside Down Apple Tart

(Serves eight)

Ingredients

Unsalted Butter - 6 Tablespoons
Firm apples - 7 (about 2 1/2 lbs) - (preferably Hudson Valley Crispins, peeled, cored and quartered)
Sugar - 1/2 Cup
Pie pastry - 1 Recipe for 10" pie
Vanilla Ice cream - 1 pint (your favorite)

Method

1. Preheat oven to 425
2. Melt butter in 12 inch skillet. Over medium-high heat. Stir in apples and sugar. Cook, stirring carefully from time to time so apples and sugar do not stick. Increase heat and cook until apples are a deep golden brown, about 15 more minutes.
3. Pile apples into a 10 inch glass baking dish or skillet.
4. Roll out the pie dough slightly larger than the dish. Place the pastry on top of the apples, tucking the dough around the edges and down into the dish.
5. Place tart in center of the oven and bake until pastry is golden brown. 35-40 minutes.
6. Remove the tart from the oven and immediately place a large flat heat proof platter top-side down on top of the baking dish. Invert pan and give the bottom a firm tap to release any apples that may be sticking to the bottom. Slowly release the baking dish so the tart falls evenly onto serving platter.

Notes

Serve warm or room temperature with vanilla ice cream
